Bruder Basil

Germany's large dairy industry is rated fourth or fifth in the world, and the cheeses produced are not well known outside the borders
Bruder Basil is a traditionally made version of the Bavarian smoked cheeses - Rauchkase. Made from partially skimmed cow's milk, this is a simple, mild, smoked Trappist-style cheese with a large distribution of tiny uneven holes. The rind is edible and chewy. The paste is yellow, semi-soft and smooth. A good snack cheese, especially served with beer. Slices and melts readily

Cornish Blue

Produced by hand and matured for as long as 12 weeks to develop its full flavour and blue veined charcter. It continues to mature and the tsate and texture matures in different directions creating rich sweet blues.

Red Leicester

A traditional form of cheese, very similar to cheddar, but flakier - the red colour is obtained from an extract of the Annatto berry, an exotic South American spice.
Although annatto was originally used simply to colour the cheese, it also contributed the distinctive flavour for which the cheese became renowned .

Cornish Yarg

Pasteurised cow's milk semi-hard cheese. Nettle covering produces distinctive rind. Natural grey, white and green moulds often present due to natural mould ripening during maturation process.

Flavour, aroma and texture: A young cheese with a fresh, faintly lemony taste and unique flavour derived from nettles. A subtle lactic smell, with the nettles imparting a delicate vegative aroma. Creamy under the crust, yet firm and slightly crumbly in the centre.
The rind is edible.

Wensleydale and Cranberries

Traditionaly made from milk drawn from cows grazing the sweet limestone pastures on surrounding farms in Upper Wensleydale. This gives the cheese the unique flavour for which it is renowned. The cheese is a fresh, young cheese taken at only three weeks old - it has a clean, mild, slightly sweet flavour with a honeyed aftertaste.

Edam

The spherical shape and bright red wax coating make Edam one of the most recognized imported cheeses.
Edam cheese was made in farms throughout North Holland and got its name, not only because it was sold here, but also because the recipe originated here. This perfectly round, red-waxed cheese is world-famous. The Edam cheese is made from semi-skimmed milk and has a lower fat content than the Gouda. It has a mild taste and a smooth texture. It is said that the unique flavor comes from the grazing pastures in North Holland.

Mild Gouda

Mild Gouda is a premium cheese aged a minimum of 60 days. It has a very mild flavor and is wonderful with fresh bread, fruit or chilled wines.
Aside from Gouda being made from whole milk and Edam from partially skimmed milk, their ingredients are almost identicle. These two cheese types are mild in flavor and smooth in texture.
